For me, Surfing internet is what i will do every midnight.
Play The Sims Social on Facebook, looking through people's updates on my news feed and searching for nice food recipes are what I'm doing middle of the night while everybody are sleeping .
Other than these, there is another thing I always do in midnight which is cooking.
To people around me cooking in midnight is something crazy to do.
"Why would I cook when it's time to sleep ? Plus I might gain weight because of that." what they always say when I tell them I cook at night.
At first, my mom complaint to people in front of me about my weird habit but then eventually she stops when she knew that complaining is not going to stop me in anyway.
Only one thing can stop me to continue my routine, MY WEIGHT!
Or if I feel guilty on my early meals.
Before starting to list the instruction of cooking Kimchi Fried Rice, I shall mourn for my second batch of DIY kimchi that spoiled last week because someone open my kimchi container lid during the fermentation.
My mom suggest me to throw it away cause no one going to touch it after looking at those white mould thingy on the surface of my kimchi.
My heart broke into pieces when i saw those mould in my kimchi.
I should remember to hide my next batch of kimchi during fermentation next time.
Kimchi is kinda hard to find it in my area, the nearest place i can find it is 35 minutes drive from my area.
The kimchi i used for this recipe is bought from Jusco Ipoh, just before i decide to make my second batch of kimchi.

Now , lets me stop talking nonsense and start listing!
Ingredients (serve one person)
2 tablespoons oil
2 clove garlic, finely minced
1/2 small onion, finely diced
1/2 cup kimchi, cut into small pieces ( For those who like kimchi you can put 1 cup or more kimchi) 1 tablespoon kimchi juice (If don't have kimchi juice add more kimchi also works.)

2 cups of overnight steamed white rice
1 tablespoon soy sauce to taste
1 tablespoon soy sauce to taste
1/4 teaspoon sesame oil (optional)
1 stalk scallion, cut into small rounds (optional)

Method
1. Heat up a wok with 2tablespoon of oil, Sauté the garlic and onion until aromatic.
2. Add in the kimchi and kimchi juice, do a few quick stir and add in the rice. Stir until the kimchi and rice combine well.
3. Add in the soy sauce, sesame oil and scallion. Stir until all the ingredient combine well with the rice.
4. After everything is fully blend together, dish out and serve when hot.
Cook's note
This dish is very easy to cook, you just have to add more kimchi for a strong kimchi taste or lessen the kimchi for a milder kimchi taste or maybe add in meat or sausages for even better taste. for my picture, it look not so nice because i cooked it in a hurry .
